The Banana & Egg Pancake Experiment

Like the very famous Tomato Rice, the 1 banana + 2 eggs Pancake has quite an equal share of attention on social media. It sounded way too simple, healthier (no flour used at all) and best of all, the ingredients needed are always in my kitchen! 
So I've decided to try making the pancake, but with some very minor modifications. So usually what you need are 1 banana and 2 eggs, but since I read some comments stating that it tastes really like banana omelet, so I added another half banana, with another half kept for later for platting/topping purposes. I also added few drops of vanilla extract for an extra fragrant and trust me it's worth it.

What to do:
1) In a bowl, mash the bananas with a fork.
2) Now add in the eggs.
3) Beat the eggs and mix them well with the banana, then add in a few drops of vanilla extract (not included in the original recipe but I love the smell of vanilla extract). Stir well.
4) Now heat your non-stick pan up on medium to small fire. Pour the mixture carefully in dollops.
5) Let it cook on one side, then flip and continue cooking on the other side. This should take roughly around 5 minutes or less.

Once done, remove and serve! My recipe made about 10 small pieces of pancakes and I've got them served nicely with some sliced banana, a scoop of ice-cream and drizzle with honey! 
The pancakes don't taste like omelet at all! In fact it tasted light and fluffy you don't feel too guilty after having them! I think it's a perfect and quick breakfast or tea time fix to make! Definitely must try and it's too easy to not try making it! Come on, don't be a lazy bum! :p
